View Full Version : Fall/Winter Meals

Well, Fall is officially here in the northern hemisphere. As you spend fewer days grilling and making fewer "summery" meals, what kinds of fall/winter meals do you make at home?


We seem to make heartier things like:

1. Roast Beef w/ mashed potatoes
2. Meatloaf w/ potatoes
3. Lasagna
4. Ham w/ potatoes
5. Chili
6. Stew
7. various casseroles ("hotdishes" to you mid-west folk).

5. Chili



1 Pound of 99% fat free ground turkey breast
1 white onion, chopped
1 green pepper, chopped
4 cans of dark red kidney beans (preferably ones not soaked in sugar. I get the GOYA brand ones), empty into a strainer and drain.
3 cans of diced tomatoes
1 jar of pasta sauce (whatever flavor you like)
2 packets of McCormick Low Sodium Chili mix

Optional Seasonings:
- Chili Powder to taste
- Garlic Powder to taste


Prep:

1. "brown" (it actually turns white, heh) the ground turkey in the pot. Use a little cooking spray.
2. Add all the other materials, including the water required by the chili mix packets.
3. Stir on medium heat, cover, allow to cook for 30 mins and simmer for another 15 mins. Boil off more liquid for a thicker sauce.


The above makes about eight 3-ladle servings, so you have plenty to freeze and have another day.


Pretty simple stuff. Plenty of protein and fiber. Super low fat. Very low in calories. Reasonable amount of sodium.

whole chicken + 1/2 cup chicken broth + cubed potatoes + sliced carrots + sliced onion.

crock pot all day.

Chicken and Dumplings
Beef stew
Pumpkin Bread/Pie/pancakes/shakes
those "lets cook all the shit in the freezer before it turns day" (usually during football)
Biscuits and Gravy
Amaretto French toast
*type of meat goes here* in the *cooking device goes here* for most of the day
Applewood smoked pork cuts
Hickory smoked beef cuts (cold smoked cheese as well)
Mesquite smoked Chicken cuts
